Soil: Various plots located in the lower part of the village of Ammerschwihr, predominantly granite and sand, but also a little Loess, aeolian calcareous silt.

Harvest: Manual with sorting
Vinification: Natural fermentation, without the addition of yeast or chaptalization. Direct pressing, for 12 hours, in a pneumatic press. Directly transferred to barrels, without settling. Natural aging for 12 to 24 months, on fine lees, in century-old oak barrels, in our new bioclimatic cellar, made of pink sandstone from the Vosges and Douglas fir from our valleys. Bottled without filtration, in the waning moon.
