The Bombischs
BOMBISCH - adj (Alsatian) -
1. generous We say that a grape is Bombisch when it is plump, full of juice.
This is our SOIF range, easy, fresh and inviting to share.

The Côtes d'Amourschwihr
This trilogy WHITE, RED and OXydative is an AUDE with ASSEMBLIES and COMPLENTATIONS.
A return to the roots of our tastes, terroirs and SECULAR history of winemaking. And yes, I am convinced that the modern ALSACE, of TOMORROW, goes through the abandonment of taste markers related to the grape variety, an element that evens taste.
All the vines producing this 'village' cuvée include our Grand Cru KAEFFERKOPF, on the hillsides protected from the sun. Vines 30 to 80 years old, some of which are in complantation. They benefit from carbonate granite and sandstone, heavy and deep.
COMPLENTATION: simply the winemaker, through the French vineyard, cultivated several varieties on the same plot, known or unknown, but ADAPTED to the place, to climatic variations, and therefore the mention of the grape variety had no MEANING.

The Scarabée
KAEFFERKOPF: n;m Tête de Scarabée in Alsatian. Name given to the 51st Alsatian grand cru from the vineyard planted on the 6 hills surrounding the village of Ammerschwihr, only on the plots exposed SOUTH-EAST. Identified since 1328 and Alsatian emblem of terroir wines across Europe. Varied geology, of deep and heavy carbonate granite and sandstone.
The SCARABEE project was born from the following questioning: HOW to find FRESHNESS and DRINKABILITY by living WITH this CLIMATE CHANGE on a terroir so massive and with a parcel mostly of Gewurtz (aromatic pink savagnin) that I refrain from replacing?

The Grands-Crus
The expression of the 3 emblematic GRANDS CRUS of the SCHLOSSBERG , WINECK SCHLOSSBERG and KAEFFERKOPF estate in DIRECT PRESS according to the vintages.
Far from the fixed consensus, the aim of this range is to integrate into the wine-growing landscape the power and finesse of wines without input on each AOC Alsace Grand Cru according to the vintages and their juices.
TRILOGY designed by Michel Tolmer , completed by the ELEVEUR DE PIERRES 2010 vintage. This vintage that Christian did not want to sell because "it's too good"
had to have a special mission. These 600 bottles of Grand Cru Kaefferkopf 2010 became our PARTICIPATIVE CUVEE to help the estate finance the construction of the 40-meter dry stone wall .

Mëralla
MICRO CUVEE of RARE Alsace Grands Crus (Nothing Added, Nothing Taken Away). ALSACE, with its 51 GRANDS CRUS, is EXCEPTIONAL and vastly unknown. Michèle & Christian set out to EXPLORE it through encounters, juices, vintages, and their current sensibilities.
MËRALLA (Michèle in Alsatian) is a joint project based on raw products from our vineyards and orchards, to showcase the flavors of our origins and the promotion of our co-products. Production of gourmet and cosmetic grape seed oil, apple juice, and verjuice.
