Vinification: Natural fermentation, without the addition of yeast or chaptalization. Direct pressing, for 12 hours, in a pneumatic press. Directly put into barrels, without settling. Maceration for 6 months in 2022 and 8 days in 2023. Light non-sterilizing filtration, and aging in concrete vats.
