Vinification: Slow pressing, with strong selection of juices, as in Champagne. Cold settling. No addition of yeasts, nor enzymage... No chaptalization. Aging on fine lees for 11 months. Non-interventionist vinification, sheltered from modern oenological techniques, in our new bioclimatic cellar, made of pink sandstone from Alsace and Douglas fir from my valley! A high energy place. Second fermentation in bottles (champagne method). Aging on slats until disgorging carried out as late as possible (date written on the back label); No expedition liqueur, this is a Crémant Extra Brut. And therefore 100% grape juice, with no added sugar.
