Vinification: Natural fermentation, without the addition of yeast or chaptalization. Direct pressing, for 12 hours, in a pneumatic press. Directly put into barrels, without settling. Natural aging, generally for 24 months, in century-old oak barrels, in our new bioclimatic cellar, made of pink sandstone from the Vosges and Douglas fir from our valleys. Bottled without filtration, directly from the barrel, in the waning moon.
