    Vinification: Natural fermentation, without the addition of yeast or chaptalization. Direct pressing, for 12 hours, in a pneumatic press. Transferred directly into barrels, without settling. Natural aging on fine lees for 18 months. The pedoclimatic configuration of Hinterburg is quite close to the Grand Cru Kaefferkopf and I observe the same genetic need to carry out long aging, of more than a year in this terroir, to magnify its potential. Aged in century-old oak tuns, in our new bioclimatic cellar, in pink sandstone from the Vosges and Douglas fir from our valleys. Bottled without filtration, directly from the barrel, in the waning moon.
