Improves over several weeks after opening. Modern or ancestral expression of this great terroir, the Kaefferkopf, reductive and closed by nature, and therefore revealed by oxidation. Vinification: Blend of vintages from 2012 to 2019. Each vintage is vinified as follows: blend of Riesling, Muscat and Gewurztraminer made directly in the vineyard to obtain greater depth in the wine. Some vintages were macerated for 2 weeks, others not. 12-hour pressing in a pneumatic press followed by barreling, without settling. Natural fermentation, without the addition of yeast or chaptalization. Blend made in a century-old oak cask in our bioclimatic cellar, made of pink sandstone from the Vosges and Douglas fir from our valleys. Bottled directly from the cask, without filtration.
