Vinification: Natural fermentation, without the addition of yeast or chaptalization. Direct pressing, for 12 hours, in a pneumatic press. Natural aging on fine lees for 8 months in century-old oak barrels, in our bioclimatic cellar, built from natural and local materials, stone and wood, in compliance with ancient laws. Wine neither fined nor filtered.
