Vinification: Slow pressing, cold settling. No yeast or enzyme addition... No chaptalization. Natural fermentation, without yeast addition, alcoholic and malolactic, for several months in concrete vats. Aged for 12 months on fine lees in old barrels. A non-interventionist vinification, protected from modern oenological techniques, preserving the intrinsic quality of the grapes as much as possible.
