Vinification: Natural fermentation, without the addition of yeast or chaptalization. Direct pressing, for 12 hours, in a pneumatic press. Directly transferred to barrels, without settling. Natural aging for 18 months in century-old oak tuns, in our new bioclimatic cellar, made of pink sandstone from the Vosges and Douglas fir from our valleys. Bottled without filtration, directly from the barrel, in the waning moon.

The presence of a castle dating from the 12th century makes this Grand Cru unique in Alsace. It formerly bore the name Windeck or Weineck, literally "the wine corner". Since the 18th century, the vineyard site now occupied by the Grand Cru was called Schlossberg ("hill with the castle"). References to this place have multiplied since the end of the 18th century. The reputation of these hillsides is such that they have become the typical representation of the Alsatian vineyard: in the illustrations of Hansi (the bell tower in the vines, 1929). To avoid confusion with the Grand Cru Schlossberg of Kaysersberg, the appellation was expanded and became Wineck-Schlossberg. This terroir was classified as a Grand Cru in 1985.
